Week two and going strong .. As a Sweat Pink Ambassador and participating in the Lorna Jane Move Nourish Believe Challenge, I am loving that each day there is “something new” to try, do .. or eat! As a busy mom .. on a detailed training schedule, in between kiddo drop offs, pick ups and meetings .. it’s easy to fall into the same old routine. This challenge has certainly kept me on my toes and made me think a bit more .. about what I’m “challenging myself with today”.

This weeks challenge was NOURISH .. from the inside out {exactly where I need to focus}! It went like this ..

Week 2

Monday: Go Meatless – Our house has been meatless for almost three years .. so I made one of our favorites Butternut Squash Pasta.

Tuesday: Take Your Lunch To Work – I’m a stay at home mom and my typical work day starts at 6:00 a.m. and is at warp speed until bed time. My work desk is my kitchen table, where I enjoyed potato and leek soup – yummy!

Wednesday: What I Ate Wednesday – This is one thing I’m really trying hard to perfect. This is made easier for me using one of my new favorite things my Erin Condren Life Planner – seriously one of my best purchases this year (and not only for tracking my food, but to run my life)! For me, I tend to skip meals and then at 2:00 in the afternoon I’m starving and ready to eat the refrigerator! Like I said a work in progress!

Thursday: Thirsty Thursday Smoothie Day – This day was my favorite to share .. I love, love, love a good smoothie! A typical day for me starts with a Shakeology Smoothie .. it’s loaded with whole food nutrition and good for you super foods .. an all in one nutrient dense cup of yum! One of my favorites is the Vegan Chocolate blended with frozen strawberries, bananas and peanut butter.

Friday: Go Raw – It was hard to think outside of my recipe box .. but I picked something my family loves and put a new twist on it. Chipotle Lime Avocados .. so good! I will be using this new recipe as an easy appetizer or side dish quite often – heck maybe even part of my lunch!

I’m looking forward to start the third week of this challenge .. where it will be all about BELIEVE .. and a little self love! We can all use more of this!
